Spiced Apple and Honey Cake — a favourite autumnal treat!

This Spiced Apple and Honey Cake is one of our favourites and the girls love getting involved and crowning it with the apple slices and drizzling over the honey. The recipe is really quick and versatile and you can use whichever flour you have to hand — plain will give you a lighter bouncy sponge, spelt a drier denser texture but a wonderful rich flavour and ground almonds will give you a dense but super moist cake. I generally use a mixture of all three – but go with whatever you prefer/ can get your hands on. You can also vary the quantity of apple you grate into the batter- the more apple… the stickier and more pudding-like the texture.

The extra bonus of a versatile recipe like this is that you can use it to discuss and explain to children the differences in ingredients and how they will change the end result. Cooking is a great way to develop children’s confidence, creativity and motor skills when at home so always try and talk about what you are doing and why- you will all gain so much more than just a delicious cake!

Spiced Apple and Honey Cake

  • 1 cup flour (I use a combination of flour, spelt and ground almonds)
  • 2 tsp ground cinnamon
  • 2 tsp ground ginger
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/4 cup runny honey
  • 1/4 cup olive oil
  • 1 egg
  • 3-4 apples, 2 or 3 grated and one finely sliced for the top
  • Honey, to drizzle

Preheat the oven to 180°C and grease and line a 15cm cake tin with baking parchment. Set aside.

Add all the dry ingredients, including the apples, into a bowl. In a separate bowl whisk together the eggs, oil and syrup. Add the egg mix to the dry ingredients and fold in. Pour into your prepared cake tin. Arrange the apple slices ontop and drizzle with honey and cinnamon. Push the apple slices into the batter and then place in the oven for 30 minutes or until golden and risen. Allow to cool on a wire rack before turning out.

Enjoy anytime of day or even warm from the oven!
