Summertime Scones, quick to make and quintessentially English

A freshly baked, fluffy scone is one of summer’s great delights! Of course you can enjoy them anytime but I find myself drawn to these summertime scones every year when we visit England for the summer. There is something particularly wonderful and quintessentially English about enjoying a scone with a pot of tea on a sunny British day!

This recipe is remarkably straightforward and extremely quick so you really can make and bake them within 20 minutes. I use double cream instead of the butter and milk as I find it gives the final scones a beautiful fluffy texture — with the added bonus that the dough is far more forgiving and comes together extremely quickly. You can use whatever fried fruit you like or leave it out altogether if you’d prefer. I have particularly fond childhood memories of cherry scones so maybe I’ll make some of those tomorrow…

Summertime scones

  • 200g self raising flour
  • 1 heaped tbsp caster sugar
  • 150ml double cream
  • Handful of raisins or other dried fruit (optional)

Heat the oven to 200°C and lime a baking tray with parchment. In a large bowl, mix the flour, sugar and, if using, the raisins. Add the double cream and combine before using lightly floured hands to bring the mixture together into a smooth dough.

Roll or pat out the dough to 1.5cm thick, then either cut into wedges (as in the photos) or use a cookie cutter to cut out circular scones. If you are cutting circles make sure you don’t twist the cutter as you press down and you will need to re roll the offcuts of dough and cut out the remaining scones.

Whichever shape you choose — transfer the scones to a baking tray and lightly brush the top of each scone with a little milk. Bake for 15minutes or until the scones are golden.
Leave to cool, then cut the scones in half widthways. Spread both sides generously with butter or cream and plenty of jam or curd.

Enjoy them in the sunshine…or inside with a pot of tea if its pouring with rain outside!
