Bunny Cake — fun for Easter celebrations and birthdays too!

We recently celebrated a friend’s birthday, and surprised them with this fun bunny cake. It is perfect for any Spring celebration, especially Easter, and actually very simple to make. You choose your favourite ingredients, and then simply follow our tips for decorating! Even less adventurous bakers or cake-makers can replicate this idea with success.

You will need a two-layer round cake, icing, sugar cookie ears, and a few little Smarties or other small sweets for the bunny face. That’s really it. But the ears really seem to make it.

Here is how we made our bunny cake:

  • We made a round, 8 inch two layer carrot cake. This carrot cake is a great one, and Courtney’s favourite too. I also think a lemon cake would be very yummy as well.
  • Use a simple buttercream or cream cheese icing recipe. I really like this one as it isn’t too sweet. And save some icing for the ears too.
  • The good news is that you don’t have to apply the icing perfectly, because desiccated coconut covers all sins and also creates that fluffy bunny look. So I let the kids apply icing to their heart’s content! (We used organic, unsweetened, desiccated coconut). Apply it with the back of a spoon or spatula to keep it on the sides.
  • Use a basic sugar cookie recipe to make the ears, then roll out the ears about 1/4 inch thick, and we free form cut the ears. Our ears were about 12″ in length, and a bit wonky, which is fine since that is where the character comes from. See my photo for an idea of the shape, and note the tabs on the end to go into the cake.
  • When the ears are completely cool, add a bit of pink food colouring (we added way more than I meant to and I would have loved a softer pink ear) but you choose your shade of course! Use a small knife (kids utensils are great) or the back of a spoon to spread it on.
  • Cut two slits into the cake and insert the ears.
  • We used Smarties sweets for cute little eyes and a nose. We liked the simple face, whiskers and a mouth may work for some, but we choose to keep the focus on those big ears and fluffy fur.
