Fruit Pizza

What kid doesn’t love pizza? And a fruit pizza? Super fun! We love these simple and sweet pizzas. To make : get some dough, add a handful of cheese, some tomatoes, a few olives, and a piece or two of pepperoni, grab your slice, and bon appetite!…

Or, should I say, a slice of watermelon (crustless is optional), sprinkle on some toasted coconut (instead of cheese), raspberries (instead of tomatoes), blueberries (substitute the black olives), and blood oranges (pretend pepperoni, of course). 🙂

Ingredients:

  • Watermelon, sliced horizontally in 1/2 inch pieces
  • Toasted coconut flakes
  • Raspberries
  • Blueberries
  • Blood Orange slices

Add any other toppings you might think are fun — these are really just what we had in the fridge. Creativity and imagination is part of this pizza making process.

I cut the slices first before serving each kid their personal pizza base before the toppings. It is easier so they can dive in and eat when they are done.

We even have kids come over for play dates who normally don’t ‘love’ fruit, and somehow they find these are acceptable! Basically, the build-your-own  pizzas which use their imaginations make the whole difference to taste buds. Yum.

What a great idea to use watermelon as a base for these! We always used a sugar cookie base and a yoghurt dip as the “sauce” when I was younger. But I like this simpler take!

Thanks Lizzy. Perhaps yoghurt on the watermelon base will help to make the coconut and fruit toppings stick better too! Something worth trying. Thanks. x
