Oat and Banana Pancakes — just 3 ingredients!

We love pancakes! Every single type of pancake! And now we’ve found a recipe which our girls can make entirely on their own; only using three ingredients and hardly any washing up (hurray I hear you say). It’s so simple I managed to enjoy a cup of freshly brewed coffee while I watched Florence make these pancakes totally on her own the other day! They’ll make your kids feel like real little super cheflets.

We started making these for breakfast and then realised they are so versatile they make great snack platters for playdates and we’re even going to pop some in our lunchboxes this week too. Give them a try — they are oh so good!

Ingredients:

  • 50g oats
  • 2 medium sized eggs
  • 1 banana

Simply crack the eggs into a measuring jug, add the oats and the banana (breaking it up with your fingers into small chunks). Using a hand held mixer, blend until the mixture is smooth. Add half a teaspoon of coconut oil into a pancake pan and gently heat. Pour rounds of the pancake mixer into the pan. It’s your choice what size pancakes you prefer — big or small — but we’re currently loving them small (around 6cm in diameter) so we can take bite sizes at a time. Give each side a few minutes to cook and serve warm. We love ours with a sprinkling of coconut, a few blueberries and a drizzle of maple syrup. We’ve also added pops of cocoa nibs to give them a lovely chocolately crunch. Depending on the size you make this mixture will give you around 15 small pancakes.

Hello Ewa, The table cloth is an oil cloth from John Lewis online. I bought it a few years ago now but it may still be available.x
