After a summer of a daily ice cream by the seaside or a gelato after dinner while meandering along city streets, I wanted (needed!) to return home to a bit of a healthier routine. And since we acquired a slight sweet tooth, it was essential to find sugar-free options that also were delicious and easy.
Introducing the Coconut Oat Date Energy ball! A bake-, cook-, dairy-, sugar-, and gluten-free delight!!! These are great in a lunchbox, as an after-dinner treat with some fruit, or even in the morning with a hard-boiled egg.
This simple recipe can serve as a base for you — we are already considering balls with peanut or almond butter, pecans, and more!
These balls only take a few minutes to make and can be done with your kids too. It is fun to roll them around and get your hands a bit gooey. The energy balls are bursting with yummy flavours, and packed with healthy and good-for-you foods! Packed with power and flavour, rolled up into one. 🙂
Ingredients :
-6 pitted fresh medjool dates (not dried), cut up into smaller chunks
-30 grams sunflower seeds
-30 grams pumpkin seeds
-25 grams desiccated coconut
-10 grams date syrup
-40 grams organic oats

I will try these! I like the fact that there’s no (raw) chocolate — I don’t like that too much but many recipes use it. I love that little spoon, BTW — so sweet!
