Cherry Chocolate cheesecake

It’s cherry season now and so it’s the perfect time to share this crazy delicious cherry cake recipe with you. I’ve seen this kind of cake around Germany quite a few times already but never had the chance to try it out (usually the final piece has been snatched by a person standing in line in front of me!), so I decided to take matters into my own hands and make one myself!
In Germany it’s called ‘Russischer Zupfkuchen mit Kirschen’ and I made mine after this recipe with a reduction of sugar and it turned out AH-MAZING! And the best part of this recipe is that it is one of the simplest I have ever seen! You’ll see…

Cherry Chocolate Cheesecake

Ingredients for the crust:

-400g (3 1/3 cups) flour (any kind your heart desires, I used spelt)
-20g (4 tsp.) baking powder
-200g butter (room temperature, cubed)
-100g (1/2 cup) sugar
-1 egg
-Pinch of salt
-40g (1/3 cup) cocoa powder

Ingredients for the filling:

-450g (2 2/4 cups) cottage or ricotta cheese
-100g (1/2 cup) sugar
-3 eggs
-200g butter
-40g (1/3 cup) cornstarch
-Fresh or frozen cherries (as many as your heart desires)

1. Set your oven to 160°C/320F
2. Melt the butter for the custard and let it cool
2. Put all of the ingredients for the crust into one big mixing bowl and mix until dough forms.
3. Line half of the dough into paper lined cake form and add about 5cm edge (I used only fingers). Put into a freezer while making the filling.
5. When butter isn’t hot anymore mix all of the ingredients for the filling (including melted butter), pour into the base and sprinkle with pitted cherries
6. Now crumble the second half of the dough over the top of the cake and bake for about 1 hour

Let it cool and refrigerate over night.
