I Love a good beet salad. Peel, chop & roast until tender. Then toss with goat cheese, fresh thyme, balsamic vinegar and season with salt & pepper. Yum!
My kids love beetroot dip – 2 large red beetroots and half a clove of garlic oven roasted until tender, leave to cool, then mix in a blender. add half a cup of natural greek yogurt and a large tablespoon of cream cheese season to taste. yum!

The simplest flavours are often the best. We make thick slices of perfectly cooked beets, spread them out in an oven dish, and top with slices of good chevre. Into the oven until the cheese is melted and golden. Delicious!
Do you cook the beets in the oven or in water on the stove??
