Red Beets — don’t forget!

Don’t forget the wonders of beetroot! They’re in season, and so delicious both in taste and colour!
We have posted some recipes and ideas before (yummy red beet salad, and roasted red beet and beetroot houmous!). Do you have some red beet recipes to share? We would love to hear!

I Love a good beet salad. Peel, chop & roast until tender. Then toss with goat cheese, fresh thyme, balsamic vinegar and season with salt & pepper. Yum!

The simplest flavours are often the best. We make thick slices of perfectly cooked beets, spread them out in an oven dish, and top with slices of good chevre. Into the oven until the cheese is melted and golden. Delicious!

Do you cook the beets in the oven or in water on the stove??
