Easy tomato soup – from the cupboard

tomato soupThis weekend we were staying in London with Courtney and her family. We met up with Michela and her family on Saturday, who also spent the Easter weekend in London!  After a fun day spent in Hampstead Heath and an enormous lunch at Kenwood House (both in people as in food), we weren’t too inspired to cook dinner…
We had a look in Courtney’s cupboard and decided to make tomato soup, which together with a lovely salad and some good bread made a perfect meal.

Here’s the recipe for the tomato soup — all of the ingredients are to be found in the pantry!

Tomato soup – 6 to 8 portions:

  • 2 large onions (peeled & chopped)
  • 2 garlic cloves (peeled & crushed)
  • 3 cans of tomatoes (chopped, or not, it doesn’t really matter)
  • 1 package of passata (500 g), or tomato juice, or another can of tomatoes, or some fresh tomatoes, or whatever you have handy
  • 2 stock cubes (vegetable / beef / chicken)
  • Olive oil
  • Salt & pepper
  • Some dried basil, thyme, oregano, a bay leave – some of it, or all, whatever you have available
  • Double cream
  • Fresh basil, or parsley

In a large pan, saute the onions with the garlic in olive oil until transparent. Add the 3 cans of tomatoes and the passata (or whatever tomato-sauce-like you’re adding). Add 2 cans of water. Bring to a boil and add the stock cubes and the dried herbs. Put on low heat and cook for at least half an hour (longer is allowed, it will only make it better). Before serving, puree the soup and add salt and pepper to taste. It’s nice to add some cream and fresh basil before serving.

I’m making this soup today as the sun is out and it always reminds me of summer. I keep reverting back to this recipe and it’s a big hit with the family every time 🙂
