No-Knead bread
A bit over two years ago there was a little article in the NY Times with a recipe for  ‘No-Knead Bread’.  I remember reading this article (I even watched the video), totally impressed with how easy it seemed and how yummy that bread looked. I scribbled down the recipe and threw it into my recipe notebook. All I needed was a cast-iron pot and I could be on my way to making this bread…

Little did I know that I was one of thousands of people who read that article, watched the video, and vowed to become the next bread baker. The ‘no-knead bread’ recipe now has quite the cult following, and there’s no doubt why: it really is that easy and that yummy!

It took me two years to finally attempt it (actually, my husband first took the plunge), but we are now completely obsessed.  This bread is SO DARN GOOD! Crispy on the outside, soft and light on the inside.  Seriously, you must, must try it.

wow. funny coincidence. I have a friend who has recently talked me into trying bread. — I”ve never wanted to bother with the yeast/kneading/rising/etc. gig. Cooking is my thing, not baking. But, I tried anyway, and have been okay, but a bit too heavy, and not crispy enough on the outside — for my tastes. It gets eaten, but I think out of obligation. Anyway, I was going to email your “what’s for dinner” to see if anyone had any suggestions on this, and voila. I just saw an article full of recipes on no-knead bread in Eating Well this morning (old issue) and here is this. Your picture looks like the gorgeous bread I hope to make. This bread is the best ever! I discover the book a year ago and bought it in Amazon (… It’s one of the best things I have ever bought!!!… Since then, we have fresh bread everyday… It really takes 5 minutes to have real, real bread!!!

I’ll have to give this a try – fresh bread is the best! My mom and I recently took the plunge and baked a rosemary-lemon no knead bread (recipe is online at Williams-Sonoma). It was delicious….and very very easy.
