Sour cream blueberry muffins


With UK Mother’s Day coming up, I’m in the mood for muffins…

I suggest “accidentally” leaving a muffin recipe on the counter on Saturday night, and then sleeping in on Sunday morning. Maybe your husband and kids will get the hint! Emilie wrote about a good banana muffin recipe, and I also have a favourite blueberry muffin recipe that is ALWAYS a hit. These muffins are delicious without being too sweet, and they’re so easy to make. Perfect for dads to make for mums! Here is the recipe:

Sour Cream Blueberry Muffins:

  • 1/4 cup (55 grams) of butter at room temp.
  • 3/4 cup of sugar
  • 2 eggs
  • 1 ¼ cups plus 2 tablespoons of sifted flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 cup of sour cream (or créme fraiche)
  • 1-2 cups of blueberries
  • 1/2 tsp. vanilla

Preheat oven to 450°F and line a muffin tin with paper or foil liners.

In a medium bowl, cream butter and sugar. Add eggs one at a time, beating well. Sift flour, soda and salt together, and add to butter mixture alternatively with the sour cream. Gently fold in berries and vanilla.

Bake for 12-15 minutes, until golden brown. (Makes 12 muffins).

*Even if your Mother’s Day isn’t until May, you should still leave this recipe out over the weekend. In the words of my own mother, “Every day should be Mother’s Day”!

Oh I am so glad you posted about muffins. I am hosting book club at my house this month and wanted to have a variety of muffins set out for our brunch. Love that they are easy!

These muffins are heavenly!!!! And sooooo easy to make! Still greatfull to Courtney for giving it to me. You can impress anybody with them by making them 20 minutes before guests arrive! They are fantastically delicious!

I made these muffins this past sunday, they were a hit with my husband and my 8 month old seemed to like them as well. I added baking powder to them, not sure if I was supposed to do that or not but the recipe did not call for it and I am not used to making muffins without it. Do they rise all right without baking powder? Anyway, they were delicious. Also, I love this site. I so want to live in London, or Amsterdam, or Paris or Milan:) I am also planning on trying the skinny pancakes very soon!

Oh my gosh. I forgot to include the BAKING SODA!!! How awful!
Carolyn, you’re absolutely right- they will not rise without the baking soda (or baking powder). This recipe calls for 1/2 tsp. baking soda!!!!
