How to bake bread

This is yet again a post that is not strictly related to children — but I saw this video on the Guardian website and I just had to blog about it. I love baking and have been attempting to do some baking with yeast, but I truly had no idea about how it is done properly. I have always wondered why the bread I make does not have a real crust like the bread sold in the bakery… and now I know. After watching this video I completely understand why people train for years to become a baker — there is so much craftsmanship involved.

By the way, I love the way this guy has a special tool just to cut a little slit on the top of the dough.

Loving it. I’ll be practising the ‘Bertinet technique’ over the holidays. I’ve never been able to get my bread to rise like that. Clearly I need to bash it about a bit more. And just where do I get one of those plastic scrapy things?!
