Oeuf au Lait

Oeuf au lait is one of my childhood favourites when it comes to desserts. It is the simple man’s version of a crème brulée — except that there is no cream and no burning involved… It is also one of the easiest things to make: you only need milk, eggs, sugar and an oven.

Here is the recipe I got from my grandmother, who fed this to my mom and her siblings as a great way of getting kids to eat diary… Clearly, this was before yogurts had become readily available all over the world…

Oeuf au Lait:

-500 ml of milk
-2 eggs
-60 grams of sugar
-1 vanilla pod

Pre-heat your oven to about 150° C. Cut the vanilla pod in half and add to the milk.  Add the sugar to the milk in a pot. Bring to a boil and let it cool down with the vanilla pod infusing the milk. Beat the eggs into the mixture, and fill up 6 ramekins. Sit the ramekins into a “bain marie”, an ovenproof dish that can fit all the ramekins, and filled up half way with warm water.

Leave the desserts in the oven for a good ½ hour and let them cool down before serving.

Perfect timing! I have a sick one home today and this sounds like the perfect soothing food. My mom used to make something similar when I was a kid and I loved it….

what’s vanilla pod? srry and any fresh milk will do?

A vanilla pod is the black long stick full of the little vanilla grains, here in France you get them in grocery shops in the pastry aisle. If you can’t find any don’t worry too much it tastes great just plain. I use whatever milk I have in the fridge!
