Banana Muffin

images-2.jpegThe other Sunday morning I woke up to the sweet smell of something baking in our kitchen. My husband and our 2-year-old daughter had for once decided that I deserved a lie-in and were baking muffins for me!!

They were truly delicious and apparently my daughter had the best time making her first muffins as she got to get her hands dirty and squish bananas and mix up the batter. They also don’t involve an electric equipment so they are danger-free!

So I recommend that you “innocently” leave this recipe lying around the kitchen and hopefully you will have some kind husband and child serve you freshly baked muffins in bed. After all, you deserve it!

Banana Muffins:

3 or 4 ripe bananas, smashed
1/3 (80ml) cup melted butter or oil
3/4 cup (150g) sugar

1 egg, beaten
1 teaspoon vanilla
1 heaped teaspoon baking powder
Pinch of salt
1 1/2 (200g) cup of flour

No need for a mixer for this recipe. Preheat the oven to 180 degrees . With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking powder and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered muffin pan. Bake until brown. Cool on a rack. Remove from pan.
